In the past year, charcuterie boards have been all the rage. We see them everywhere… on social media, at friend gatherings, office parties (pre-Covid). They look amazing, so much so, you don’t even want to eat them. Recently I came across hot chocolate charcuterie boards and hot cocoa bombs! What are those? Delicious chocolate spheres which burst open with hot cocoa mix and marshmallows, once submerged into hot milk. They are sold at various places or if you wish to make your own, you can find numerous recipes online.

Butternut Squash Dishes for Fall

Once fall comes around everyone gets into the pumpkin mood… lattes, soups, desserts, you name it.  As much as I love pumpkin, I love butternut squash just a bit more, especially during this time of the year.  Mind you, sadly, there is no autumn in Miami, however, it’s just a state of mind. Recently, I decided to search up some butternut squash recipes, I was thinking of making something new for Thanksgiving, perhaps a casserole, and I found some really delicious recipes that I wanted to share with all of you.

Butternut Squash Soup I am a soup lover, so when I came across this recipe I knew I had to try it.  It’s pretty simple and it tastes great.

Butternut Squash Gnocchi with Sage Brown Butter Gnocchi is my favorite type of pasta.  I love it with almost every type of sauce possible, so when I came across this recipe I knew I had to try it.  I am looking forward to making this very soon!

Roasted Butternut Squash with Herb Oil and Goat Cheese  This is a healthy, light dish which is very easy to make.  Makes for a great appetizer or salad prior to a nice meal.

Butternut Squash Risotto I also love a good risotto. I admit I have never tried making risotto because it’s a bit above my culinary level (LOL), but I am willing to try and make this one, it looks delicious!

Butternut Squash Lasagna  Who doesn’t love lasagna?  I have tried many lasagnas in my life (Italian food is my favorite, if you can’t tell by now), but I have never tried one like this.  Also makes a great option for a vegetarian dish.
